This is exactly what one young couple have just done, a move that was met with great applause from all the guests, according to the Daily Telegraph.

Paul Maxwell-Rose and new wife Katherine got hitched over the summer and decided to go completely ethical for their big day, having their wedding breakfast catered by Save the Date Café and the Real Junk Food Project, which works to change the way food wastage is perceived.

“They basically intercept entirely edible food that gets thrown away and only use the food that is really healthy and really good quality. They were very excited to do a wedding so they could show off to large numbers of people how high quality this food could be,” Mr Maxwell-Rose said.

The menu consisted of Hunter’s chicken, rice dishes, vegetable flans, fennel, spring onion and wild herb flan, sautéed potatoes, summer salads and wild mushroom goulash, served as a buffet instead of a sit-down dinner so guests could interact with each other and with the chefs.
